Mix squid thoroughly with AJI-NO-MOTO® and salt.

Coat the squid with tapioca flour.

Heat oil and deep-fry until cooked and crispy. Set aside.

Dry Buttered Gravy

Melt butter in a pan, add garlic, ginger and lemongrass until golden.

Add bird eye chili and curry leaf, stir-fry until fragrant.

Reduce the heat and add evaporated milk, mix well.

Season with AJI-NO-MOTO®, salt, and sugar. Mix well.

Add fried squid and mix thoroughly.

Ready to serve.
