Heat oil and fry the eggs individually until crispy. Remove and set aside.

Using the same pan, reduce the oil and add yellow onion, shallot and garlic. Stir-fry until golden.

Add red chili and bird's eye chili. Stir-fry briefly and add the tamarind juice. Let it boils.

Season with AJI-NO-MOTO®, salt and sugar.

Add the fried eggs and mix well.

Ready to serve.
