Mix all ingredients (A) in a bowl.

Marinate whole chicken leg with 2/3 of the mixture and remaining ⅓ of the mixture to marinate carrot, potato, shallot and mushroom.

Set aside to marinate for 30 minutes at room temperature or overnight in chiller.

Lay a baking paper on the air-fryer basket, then put all vegetables as a base, then arrange chicken on top. Lastly, sprinkle the parsley.

Air-fry at 170˚C for 35 minutes or until fully-cooked and golden brown.
