Mix yeast with 10 g of milk in a container and set aside.
Pour the remaining milk into another container and mix well with honey. Set aside.
In a large bowl, combine bread flour, milk powder, eggs, and the mixture of milk and honey. Knead for 20 minutes until a dough forms.
Wrap and store in the refrigerator for 40 minutes.
Add the milk and yeast mixture. Knead until well combined.
Mix melted butter with AJI-NO-MOTO®, salt and sugar. Pour into the dough and knead for 25 minutes.
Rest the dough at room temperature for 1 hour.
Sprinkle flour on the surface of a table or tray and on your hands. Take out the dough, weigh it and divide into 8 g portions each. Shape into rounds and arrange them on a baking mould.
Rest the dough for 40 minutes at room temperature.
Brush milk on the surface of the bread and bake in a preheated oven at 175°C for 10 minutes. Once cooked, apply butter on the bread.
Ready to serve.
