1. Remove Skin from Nuts for Kuah Kacang

When preparing the beloved Kuah Kacang, a peanut sauce commonly served with satay, remove the skin from the nuts. This simple step helps prevent bitterness from overcooked nuts, ensuring a smooth and flavourful sauce that delights the palate.

To remove the skin, you can pan-toast the nuts a little on a stove without oil which will ease the skin-peeling process, or you can purchase pre-peeled nuts from the store.

2. Use Fresh Santan for Long-Lasting Dishes

For dishes that call for santan (coconut milk), such as lontong or rendang, always opt for fresh coconut milk. Fresh santan not only enhances the taste but also prolongs the shelf life of your dishes, allowing you to savour the flavours of Raya for days to come.

To maintain a fresh santan, you would have to make sure the surface of equipment and tools are clean to avoid impurities that may cause contamination and food spoilage! This may seem simple and small but it’s essential so that you could safely enjoy your favourite Raya dishes without worry!

3. Keep Stirring for Lump-Free Lontong

When preparing lontong, be sure to keep stirring the coconut gravy to avoid lumps. Santan, when left unattended on high heat, may break apart and form little lumps in dishes. Consistent stirring ensures a smooth and silky gravy that coats each bite of lontong with deliciousness. To be safe, the gravy should be cooked on low heat to a simmer rather than a boil.

4. Cut Against the Grain for Tender Beef Rendang

When slicing beef for rendang, remember to cut against the grain. This technique shortens the muscle fibers, resulting in tender and melt-in-your-mouth meat that’s sure to impress your guests!
