Heat some oil, cook sausage to render its fat.

Toss in the shallot and cook 2 minutes.

Add garlic and potato, cook another 2 minutes.

Add chopped kale and cook for a while.

Stir in chicken stock and vinegar.

Reduce heat, cover and simmer for 1 hour.
