In a large bowl, combine egg, wheat flour, tapioca flour, rice flour, chili powder, and cold water. Mix thoroughly.

Add bitter gourd and coat evenly.

Heat cooking oil in a pan. Deep-fry the bitter gourd until crispy

Tips: Soak the sliced bitter gourd in salted water for 20 minutes to reduce its bitterness.
