Mix all ingredients (A) in a bowl and keep aside.

Crack eggs in a bowl and beat. Keep aside.

Heat up cooking oil in a pan. Pan-fry egg tofu until crispy outside. Keep aside.

Transfer excessive oil from the pan, add garlic, ginger and red onion. Stir-fry until fragrant.

Add minced chicken and stir-fry until fully-cooked, then add in maitake mushroom and ingredients (A) then stir-fry for 2 minutes. Transfer to a plate and set aside.

In the same pan, add in 2 tbsp cooking oil and pour beaten egg and arrange egg tofu on top.

When the egg almost fully-cooked, pour the mushroom and minced chicken mixture. Sprinkle spring onion and red chili. Ready to serve.
