Green Tea Pancake with Apple Delight

Peel and dice apples, then place into a nonstick pan. Sprinkle in salt and add lemon juice.

Cook over medium heat until apples turn soft and dry in consistency. Turn off the heat and add Pal Sweet® Low-Calorie Sweetener. Stir to mix. Put aside to cool before serving.

Put sifted flour, potato starch, sugar, salt, baking powder, bicarbonate of soda into a mixing bowl. Stir well to combine.

Mix green tea powder and warm water into a smooth paste.

Whisk eggs, yoghurt and milk together until smooth. Add in green tea mixture to mix. Pour liquid mixture into the flour mixture. Whisk until just smooth. Do not over mix. Add a little more milk if necessary to thin down the batter.

Set a nonstick frying pan over medium heat. Wipe pan with a paper towel which has been dipped in oil. This is to grease the pan lightly. Pour a ladle of batter to form a circle. Cook for less than a minute until set. Flip over and cook for several seconds more to set the pancake. Remove to a plate and continue to make remaining pancakes.

Serve pancakes with the apple delight.
