Heat oil and sauté onion until transperant, add in capsicum, garlic and bay leaf, stir for 2-3 minutes.

Add tomatoes, potato, saffron, peppercorn and anchovy stock.

Cover and cook until potato are tender, around 15 minutes.

Place fish cubes, shrimp and mussel.

Garnish with chopped coriander leave.
