Trim prawn feelers and legs neatly.

Sprinkle some corn flour over the prawns and add a dash of AJI-SHIO® Flavoured Black Pepper over.

Deep-fry prawns until golden. Dish out.

Heat butter and oil in wok, once oil is hot add in curry leaves, bird’s eye chillies, oats and salted egg yolks. Fry briefly to combine.

Add in seasonings (A) followed by prawns. Toss and fry briefly until aromatic.
